- 8 oz spaghetti or pasta of choice
- 1 lb shrimp (peeled and deveined)
- 2 tbsp olive oil
- 3 cloves garlic (minced)
- 1 cup cherry tomatoes (halved)
- 1 lemon (zest and juice)
- Salt and pepper (to taste)
- Fresh parsley (chopped, for garnish)
Instructions
- Cook the spaghetti according to package instructions. Drain the pasta and set aside.
- Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the shrimp to the skillet and cook until pink, about 2-3 minutes per side.
- Stir in the halved cherry tomatoes, lemon zest, and lemon juice. Cook for an additional 2-3 minutes until tomatoes soften. Toss the cooked spaghetti with the shrimp mixture, season with salt and pepper, and garnish with parsley before serving.
Notes
Serve warm with extra lemon wedges and a green salad. Best enjoyed fresh but can be stored in the refrigerator for up to 3 days.
