- 1 lb boneless chicken thighs
- 1 can coconut milk
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 teaspoon garam masala
- ¼ cup fresh lemon juice
- 1 tablespoon lemon zest
- 2 cups basmati rice
- 2 naan
Instructions
- Prepare the onion, garlic, and ginger in a large pot until fragrant, about 3-4 minutes.
- Add the boneless chicken thighs and cook until browned, about 5-7 minutes.
- Stir in the turmeric, cumin, coriander, and garam masala and cook for a couple of minutes.
- Pour in the coconut milk and let it simmer for about 20 minutes until the chicken is cooked through.
- Finish with fresh lemon juice and zest.
- Serve hot with basmati rice and naan.
