Leftover Beef and Ham Potato Casserole

Description

A comforting casserole that transforms holiday leftovers into a delicious meal with layers of beef, ham, and creamy potatoes.


Ingredients

  • 2 cups leftover beef, shredded
  • 2 cups leftover ham, diced
  • 4 large potatoes, peeled and sliced
  • 1 onion, chopped
  • 2 cups shredded cheese (cheddar or your choice)
  • 1 cup sour cream
  • 1 can cream of mushroom soup
  • Salt and pepper to taste
  • Olive oil for greasing

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a baking dish with olive oil.
  2. Layer half of the potato slices evenly across the bottom of the baking dish.
  3. Combine the shredded beef, diced ham, chopped onion, sour cream, and cream of mushroom soup in a mixing bowl. Stir until mixed.
  4. Spread half of the meat mixture over the potato layer and sprinkle half of the shredded cheese on top. Repeat with remaining ingredients.
  5. Cover the dish with foil and bake for 45 minutes. Remove the foil and bake for another 15 minutes.
  6. Allow to cool for a few minutes before serving.

Notes

Experiment with different cheeses and add herbs or vegetables for extra flavor. Can be prepared in advance and refrigerated overnight.
