A comforting casserole that transforms holiday leftovers into a delicious meal with layers of beef, ham, and creamy potatoes.
Ingredients

- 2 cups leftover beef, shredded
- 2 cups leftover ham, diced
- 4 large potatoes, peeled and sliced
- 1 onion, chopped
- 2 cups shredded cheese (cheddar or your choice)
- 1 cup sour cream
- 1 can cream of mushroom soup
- Salt and pepper to taste
- Olive oil for greasing
Instructions
- Preheat your oven to 350°F (175°C). Grease a baking dish with olive oil.
- Layer half of the potato slices evenly across the bottom of the baking dish.
- Combine the shredded beef, diced ham, chopped onion, sour cream, and cream of mushroom soup in a mixing bowl. Stir until mixed.
- Spread half of the meat mixture over the potato layer and sprinkle half of the shredded cheese on top. Repeat with remaining ingredients.
- Cover the dish with foil and bake for 45 minutes. Remove the foil and bake for another 15 minutes.
- Allow to cool for a few minutes before serving.
Notes
Experiment with different cheeses and add herbs or vegetables for extra flavor. Can be prepared in advance and refrigerated overnight.
