Ingredients

  • 4 cups broccoli florets
  • 1 cup shredded cheddar cheese
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt butter over medium heat. Sauté onions and garlic until translucent and fragrant, about 3-4 minutes.
  2. Add the broccoli florets along with the broth. Bring to a boil, then reduce to a simmer and cook until tender, about 10 minutes.
  3. Puree the soup until smooth using a blender or an immersion blender.
  4. Return the soup to the pot, stir in heavy cream and cheddar cheese until melted. Season with salt and pepper to taste.

Notes

For extra creaminess, add more heavy cream or use cream cheese. Pair with keto-friendly bread or salad for a complete meal.
