- 1.5 lbs Sirloin steak, Ribeye, or New York Strip (cut into 1-inch cubes)
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon dried thyme or rosemary
- 4 tablespoons unsalted butter (melted)
- 3 cloves garlic (minced)
- 1 tablespoon fresh parsley (chopped for garnish)
Instructions
- Start by patting the steak dry with paper towels. Removing excess moisture is the secret to getting a good sear in the air fryer. Cut the steak into uniform 1-inch cubes so they cook at the same rate. Place the steak bites in a medium mixing bowl. Drizzle with olive oil and sprinkle with salt, pepper, garlic powder, onion powder, and dried thyme. Toss everything together until every piece of meat is well-coated in the seasoning and oil.
- Preheat your air fryer to 400°F (200°C) for about 3 minutes. Once hot, place the steak bites in the air fryer basket in a single layer. Do not overcrowd the basket; work in batches if necessary to ensure the air can circulate freely. Air fry for 6 to 8 minutes. Halfway through the cooking time, shake the basket or use tongs to flip the steak bites to ensure even browning. Six minutes will give you a medium-rare finish, while eight minutes will result in medium-well.
- While the steak is cooking, whisk together the melted butter and the minced garlic in a small bowl. If you prefer a more mellow garlic flavor, you can microwave the butter and garlic together for 20 seconds to slightly cook the garlic. Set this mixture aside until the steak is finished.
- Once the steak bites reach your desired level of doneness, remove them from the air fryer and place them back into a clean bowl. Pour the garlic butter mixture over the hot steak and toss gently to coat. Transfer the bites to a serving platter, garnish with fresh chopped parsley, and serve immediately while they are hot and glistening.
