Description

Delightful Irish potato pancakes, perfect for breakfast or as a snack, featuring a crispy exterior and soft, fluffy interior.

Ingredients

Scale
  • 2 cups mashed potatoes
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 tbsp butter
  • Extra butter for frying

Instructions

  1. Start by gathering your ingredients and ensuring your mashed potatoes are smooth and free of lumps.
  2. In a large bowl, combine the mashed potatoes, flour, baking powder, and salt. Mix well until a dough forms.
  3. Turn the dough onto a floured surface and knead it gently for just a minute. Divide the dough into two equal balls and flatten each one into a disc about 1/2 inch thick.
  4. Heat a skillet over medium heat and add 1 tablespoon of butter. Once melted, carefully place each disc in the skillet. Cook each side for about 4-5 minutes until golden brown and crispy.
  5. Remove the farls from the skillet and place them on a warm plate. Feel free to add more butter if desired, and serve warm.

Notes

Use leftover mashed potatoes for maximum flavor. Adjust the thickness of the discs based on your preference for texture.
