Ingredients

- 1 cup rice (long-grain recommended)
- 2 cups chicken broth
- 1 cup diced tomatoes (canned or fresh)
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Sauté ground turkey in sauté mode until browned, breaking it apart for even cooking.
- Add the diced onion and minced garlic, cooking until softened, about 3-4 minutes.
- Stir in rice, chicken broth, diced tomatoes, oregano, paprika, salt, and pepper.
- Close the lid and cook under high pressure for 10 minutes, then let pressure release naturally for 5 minutes.
- Serve hot, garnished with fresh parsley.
Notes
For added flavor, sauté garlic and onion in olive oil before adding turkey. Mix in vegetables for added nutrition or substitute ground turkey with chicken or beef.
