Ingredients

  • 1 lb Boneless chicken thighs
  • 1/4 cup Honey
  • 1/4 cup Soy sauce
  • 3 cloves Garlic, minced
  • 1 tbsp Fresh ginger, grated
  • 2 tbsp Rice vinegar
  • 1/2 tsp Red pepper flakes
  • 2 cups Jasmine rice
  • 1 Cucumber, sliced
  • 1 Avocado, sliced
  • 2 Carrots, shredded
  • 2 tbsp Sesame seeds
  • 2 Scallions, sliced

Instructions

  1. Cook jasmine rice according to package instructions until fluffy.
  2. Heat a drizzle of oil in a pan over medium-high heat, then add cubed chicken thighs and sauté until golden brown, about 5-7 minutes.
  3. Mix honey, soy sauce, minced garlic, grated ginger, rice vinegar, and red pepper flakes in a bowl to create the sauce.
  4. Toss the seared chicken in the sauce until well-coated and simmer for a minute.
  5. Assemble bowls by placing jasmine rice, topped with honey garlic chicken, cucumber, avocado, carrots, sesame seeds, and scallions.
  6. Serve immediately or prepare for meal prep by storing components separately.

Notes
