- 1 lb Boneless chicken thighs
- 1/4 cup Honey
- 1/4 cup Soy sauce
- 3 cloves Garlic, minced
- 1 tbsp Fresh ginger, grated
- 2 tbsp Rice vinegar
- 1/2 tsp Red pepper flakes
- 2 cups Jasmine rice
- 1 Cucumber, sliced
- 1 Avocado, sliced
- 2 Carrots, shredded
- 2 tbsp Sesame seeds
- 2 Scallions, sliced
Instructions
- Cook jasmine rice according to package instructions until fluffy.
- Heat a drizzle of oil in a pan over medium-high heat, then add cubed chicken thighs and sauté until golden brown, about 5-7 minutes.
- Mix honey, soy sauce, minced garlic, grated ginger, rice vinegar, and red pepper flakes in a bowl to create the sauce.
- Toss the seared chicken in the sauce until well-coated and simmer for a minute.
- Assemble bowls by placing jasmine rice, topped with honey garlic chicken, cucumber, avocado, carrots, sesame seeds, and scallions.
- Serve immediately or prepare for meal prep by storing components separately.
