High Protein White Christmas Truffles Cottage Cheese

High Protein White Christmas Truffles Cottage Cheese

  • Total Time: 1 hour 15 minutes
  • Diet: High Protein, Low-Carb

Ingredients

Scale
  • 1 cup low-fat cottage cheese (small curd works best)
  • 1/2 cup vanilla whey or casein protein powder
  • 1/4 cup coconut flour (adds structure and fiber)
  • 2 tablespoons maple syrup or honey (or liquid monk fruit for lower carbs)
  • 1 teaspoon vanilla extract
  • 1/2 cup white chocolate chips (for melting)
  • 1 teaspoon coconut oil (to thin the chocolate)
  • Optional: Shredded coconut or festive sprinkles for topping

Instructions

  1. Step 1: Blend the Cottage Cheese Base. Place the cottage cheese, maple syrup, and vanilla extract into a high-speed blender or food processor. Blend on high until the mixture is completely smooth and creamy, with no visible curds remaining. This step is crucial for achieving that silky truffle texture.
  2. Step 2: Mix the Dough. Transfer the smooth cottage cheese mixture into a medium-sized mixing bowl. Gradually stir in the vanilla protein powder and coconut flour. Mix until a thick, dough-like consistency forms. If the mixture feels too sticky to handle, add an extra tablespoon of coconut flour.
  3. Step 3: Chill for Firmness. Cover the bowl with plastic wrap and place it in the refrigerator for at least 30 to 45 minutes. Chilling the dough allows the coconut flour to absorb moisture, making it much easier to roll into perfect spheres without sticking to your hands.
  4. Step 4: Roll and Coat. Scoop about one tablespoon of dough at a time and roll it between your palms to form a ball. Place the balls on a parchment-lined tray. In a small microwave-safe bowl, melt the white chocolate chips with the coconut oil in 30-second intervals. Dip each ball into the melted chocolate using a fork, let the excess drip off, and return to the tray.
  5. Step 5: Garnish and Set. Immediately sprinkle the tops with shredded coconut or festive gold and white sprinkles while the chocolate is still wet. Place the tray back in the refrigerator for 15 minutes to allow the chocolate shell to harden completely before serving.
