High Protein Honey Garlic Chicken Breast with Roasted Broccoli

High Protein Honey Garlic Chicken Breast with Roasted Broccoli

  • Total Time: 40 minutes
  • Diet: High-Protein, Low-Carb, Gluten-Free

Ingredients

Scale
  • 2 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 4 cups broccoli florets
  • 1/4 cup honey
  • 1/4 cup low-sodium soy sauce (or coconut aminos)
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons olive oil, divided
  • 1 teaspoon toasted sesame oil
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • Sesame seeds and sliced green onions for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). In a small mixing bowl, whisk together the honey, soy sauce, minced garlic, grated ginger, sesame oil, and red pepper flakes. Place the cubed chicken breast in a large bowl and pour half of the sauce over it. Toss well to ensure every piece of chicken is coated. Let it sit for 10 minutes while you prep the vegetables.
  2. Place the broccoli florets on a large parchment-lined sheet pan. Drizzle with 1 tablespoon of olive oil and season with salt and black pepper. Toss the broccoli directly on the pan to coat it evenly. Spread the broccoli out to the edges of the pan, leaving a large space in the center for the chicken.
  3. Transfer the marinated chicken pieces to the center of the sheet pan, ensuring they are in a single layer. Do not overcrowd the pan; use two pans if necessary to ensure the broccoli roasts rather than steams. Place the pan in the oven and roast for 18–22 minutes, or until the chicken reaches an internal temperature of 165°F and the broccoli is tender and slightly charred at the edges.
  4. While the chicken is roasting, place the remaining half of the honey garlic sauce in a small saucepan over medium heat. Simmer for 3–5 minutes until it thickens slightly into a syrupy glaze. Once the chicken is out of the oven, drizzle this thickened glaze over the hot chicken and toss gently.
  5. Serve the chicken and broccoli immediately over a bed of brown rice, quinoa, or cauliflower rice for a lower-carb option. Garnish with a sprinkle of sesame seeds and freshly sliced green onions to add a pop of color and crunch.
