Ingredients
Scale
- 1 cup Vanilla or Snickerdoodle Whey Protein Powder
- 1/2 cup Blanched Almond Flour
- 1 tablespoon Ground Ginger
- 1 teaspoon Ground Cinnamon
- 1/4 teaspoon Ground Cloves
- 1/4 teaspoon Ground Nutmeg
- 1/3 cup Creamy Almond Butter (unsalted)
- 2 tablespoons Blackstrap Molasses
- 1–2 tablespoons Sugar-Free Maple Syrup or Honey
- 1/2 teaspoon Vanilla Extract
- Optional: 1 tablespoon White Chocolate Chips or Greek Yogurt for “icing”
Instructions
- In a large mixing bowl, whisk together the protein powder, almond flour, ground ginger, cinnamon, cloves, and nutmeg. Ensure there are no lumps in the protein powder or almond flour so the spices distribute evenly throughout the dough.
- Add the almond butter, blackstrap molasses, vanilla extract, and one tablespoon of maple syrup to the dry mixture. Use a sturdy spatula or your hands to fold everything together. If the mixture feels too crumbly, add the second tablespoon of syrup. The dough should feel like thick, pliable playdough.
- Scoop about one tablespoon of the dough at a time and roll it between your palms to form a smooth ball. Alternatively, press the dough into small square molds to give them a “house” shape. Place the finished bites on a tray lined with parchment paper.
- If you want to create the “gingerbread house” look, melt a few white chocolate chips or use a thick dollop of Greek yogurt to pipe small windows or snow-covered roofs on each bite. Place the tray in the refrigerator for at least 30 minutes to allow the bites to firm up before serving.
- Cook Time: 15 minutes
