- 2 lbs Chicken breast, cut into 1-inch cubes
- 3 tbsp Olive oil
- 1/2 cup Grated Parmesan cheese
- 4 cloves Garlic, minced
- 1 tsp Garlic powder
- 1/2 tsp Onion powder
- 1/2 tsp Smoked paprika
- 1/2 tsp Salt
- 1/2 tsp Black pepper
- 2 tbsp Fresh parsley, chopped
- 1 tbsp Lemon juice
Instructions
- Start by cutting your chicken breasts into uniform 1-inch cubes to ensure even cooking. In a large mixing bowl, whisk together the olive oil, minced garlic, lemon juice, garlic powder, onion powder, smoked paprika, salt, and pepper. Add the chicken cubes to the bowl and toss thoroughly until every piece is coated. If you are using wooden skewers, soak them in water for at least 20 minutes before this step to prevent burning. Thread the marinated chicken tightly onto the skewers, leaving a small handle at the bottom.
- Preheat your grill or air fryer to 400°F (200°C). If using a grill, lightly oil the grates. Place the skewers on the heat source. Cook for 12 to 15 minutes, turning them every 4 minutes to ensure a golden-brown crust on all sides. Use a meat thermometer to check that the internal temperature reaches 165°F (74°C). During the last 2 minutes of cooking, sprinkle the grated parmesan cheese generously over the skewers so it melts and forms a slight crust.
- Remove the skewers from the heat and let them rest for 3 minutes to keep the juices inside. Transfer them to a serving platter. Sprinkle with freshly chopped parsley and an extra dusting of parmesan cheese if desired. Serve immediately while the cheese is melty and the chicken is hot. These pair beautifully with a side of roasted vegetables or a fresh Caesar salad.
