Ingredients
Scale
- 1 cup low-fat or 2% cottage cheese
- 1 medium apple (Honeycrisp or Fuji work best), chopped
- 1 teaspoon ground cinnamon
- 1 teaspoon maple syrup or honey (optional)
- 1 tablespoon chopped walnuts or pecans
- 1/4 teaspoon vanilla extract
- A pinch of sea salt
- Cooking spray or 1/2 teaspoon coconut oil
Instructions
- Start by washing your apple thoroughly. Core the apple and dice it into small, bite-sized cubes. In a small bowl, measure out your cottage cheese and stir in the vanilla extract and a pinch of salt to enhance the natural flavors.
- Place a small non-stick skillet over medium heat and lightly coat it with cooking spray or coconut oil. Add the diced apples to the pan. Sprinkle the cinnamon over the apples and toss them to coat evenly. Sauté the apples for 3 to 5 minutes until they become tender and slightly caramelized. If you prefer a bit of a glaze, drizzle the maple syrup over the apples during the last minute of cooking.
- Transfer the seasoned cottage cheese into your serving bowl. Top it with the warm, fragrant cinnamon apples. Sprinkle the chopped walnuts or pecans over the top for an added crunch and healthy fats. Serve immediately while the apples are still warm for the best flavor contrast against the cool cottage cheese.
- Cook Time: 10 minutes
