Ingredients
Scale
- 1 cup oat flour (blended rolled oats)
- 2 scoops (approx. 60g) vanilla whey or plant-based protein powder
- 1/4 cup almond butter (creamy works best)
- 3 tablespoons maple syrup or honey
- 1 teaspoon pure vanilla extract
- 1/2 teaspoon almond extract
- 1–2 tablespoons unsweetened almond milk (as needed)
- 1/4 teaspoon salt
- 2 tablespoons Christmas-themed sprinkles
Instructions
- Step 1: Combine Dry Ingredients: In a large mixing bowl, whisk together the oat flour, vanilla protein powder, and salt. Ensure there are no large clumps of protein powder so the texture remains smooth. If you are making your own oat flour, simply pulse rolled oats in a high-speed blender until they reach a fine, flour-like consistency before measuring.
- Step 2: Incorporate Wet Ingredients: Add the almond butter, maple syrup, vanilla extract, and almond extract to the dry mixture. Use a sturdy spatula or your hands to mix everything together. If the dough feels too crumbly, add the almond milk one tablespoon at a time until a thick, cookie-dough consistency forms. Fold in half of the Christmas sprinkles gently so they are distributed throughout the dough.
- Step 3: Roll and Decorate: Scoop about one tablespoon of dough at a time and roll it between your palms to form a smooth ball. Place the remaining sprinkles in a small shallow dish. Roll each protein ball in the sprinkles, pressing them lightly so they stick to the surface. Place the finished balls on a parchment-lined plate or airtight container and chill in the refrigerator for at least 30 minutes to set before serving.
- Cook Time: 15 minutes
