Ingredients
Scale
- 1 cup low-fat or 2% cottage cheese
- 2 tablespoons unsweetened cocoa powder
- 1 tablespoon maple syrup or honey (adjust to taste)
- 1/2 teaspoon pure vanilla extract
- 1/4 teaspoon peppermint extract (optional)
- 1 tablespoon mini chocolate chips
- 1 tablespoon mini marshmallows
- 1 small candy cane, crushed
- A pinch of sea salt
Instructions
- Place the cottage cheese into a high-speed blender or a small food processor. Blend on high for 30 to 60 seconds until the texture is completely smooth and creamy. You want to eliminate all lumps so the base resembles a thick pudding.
- Add the cocoa powder, maple syrup, vanilla extract, peppermint extract, and a pinch of sea salt to the blender. Pulse several times until the chocolate color is uniform and the ingredients are fully integrated. Scrape down the sides of the blender with a spatula to ensure no cocoa powder remains stuck to the jar.
- Transfer the whipped chocolate mixture into a festive bowl. Top the center with mini marshmallows, chocolate chips, and the crushed candy cane pieces. Serve immediately while the texture is light and airy, or chill in the refrigerator for 20 minutes for a firmer, mousse-like consistency.
- Cook Time: 5 minutes
