- 4 medium potatoes, diced
- 1 cup shredded cheese (cheddar or your choice)
- 1 cup milk
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Chopped parsley for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C) to ensure it’s hot and ready for your cheesy creation.
- In a large skillet, heat the olive oil over medium heat. Add the diced potatoes and cook them until they are golden and tender, about 10-15 minutes. Stir occasionally to prevent sticking and promote even browning.
- In a separate bowl, combine the shredded chicken, milk, garlic powder, onion powder, salt, and pepper. Mix thoroughly until well combined.
- Once the potatoes are tender, pour the chicken mixture into the skillet with the potatoes, and stir well to combine. Sprinkle the shredded cheese generously on top, and then transfer the skillet to the preheated oven. Bake for 15-20 minutes, or until the cheese is bubbly and golden.

Notes
For a spicy version, add cayenne pepper or jalapeños. You can substitute chicken with cooked lentils or chickpeas for a vegetarian option.
