Ingredients
Scale
- 4 large Granny Smith apples, peeled and sliced
- 1 tbsp lemon juice
- 1 tsp ground cinnamon
- 1 scoop (30g) Vanilla Whey or Casein protein powder
- 2 tbsp granulated stevia or monk fruit sweetener
- 1 cup rolled oats
- 1/2 cup almond flour
- 2 scoops (60g) Vanilla Whey protein powder
- 1/4 cup melted coconut oil or light butter
- 1 tsp cinnamon
- 1/4 cup sugar-free maple syrup
Instructions
- Preheat your oven to 350°F (175°C). In a large mixing bowl, toss the sliced apples with lemon juice, cinnamon, sweetener, and one scoop of protein powder. The lemon juice prevents browning while the protein powder creates a thick, delicious sauce as the apples bake and release their natural juices.
- In a separate bowl, combine the rolled oats, almond flour, two scoops of protein powder, and cinnamon. Pour in the melted coconut oil and sugar-free maple syrup. Stir the mixture until it forms a crumbly, sandy texture. Ensure there are no large dry clumps of protein powder left.
- Transfer the seasoned apples into a lightly greased baking dish, spreading them out evenly. Sprinkle the protein crumble mixture over the top of the apples, covering them completely. Place the dish in the center rack of the oven and bake for 30 to 35 minutes. You want the apples to be tender and the topping to be a beautiful golden brown.
- Remove the crumble from the oven and let it sit for 5 minutes. This rest period allows the protein-infused juices to thicken into a glaze. Serve it warm on its own or with a dollop of non-fat Greek yogurt for an extra protein boost.
