Ingredients

  • 1/2 cup oats
  • 1/4 cup coconut sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup coconut oil, melted
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup dark chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine almond flour, oats, coconut sugar, baking soda, and salt. Whisk until well blended.
  3. In another bowl, whisk together melted coconut oil, maple syrup, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and mix until combined.
  5. Fold in the chocolate chips gently.
  6. Scoop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper, leaving space between each scoop.
  7. Bake for 10-12 minutes or until lightly golden around the edges.
  8. Allow to cool slightly before serving.
