Ingredients

  • 2 medium zucchinis, diced

  • 1 bell pepper, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • 1 cup shredded cheese (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped onion and bell pepper, sautéing until softened, about 3-5 minutes.
  3. Incorporate the minced garlic and cook for an additional minute.
  4. Increase the heat to medium-high and add the ground beef, cooking until browned.
  5. Stir in the diced zucchini, Italian seasoning, salt, and pepper, and allow to cook for another 5-7 minutes.
  6. Sprinkle shredded cheese on top if desired, cover, and let it melt.
