- 1 sheet of pie dough (store-bought or homemade)
- 1/4 cup sugar
- 1 teaspoon cinnamon
- 1 egg (for egg wash)

- Vanilla ice cream (optional, for serving)
Instructions
- Preheat the grill to medium-high heat.
- Toss the peach slices with olive oil, 2 tablespoons of sugar, and cinnamon in a bowl.
- Place the peach slices on the grill and cook for 2-3 minutes per side.
- Roll out the pie dough on a floured surface into a 12-inch circle.
- Arrange the grilled peaches in the center of the dough, leaving a 2-inch border.
- Fold the edges of the dough over the peaches, creating pleats.
- Brush the crust with beaten egg and sprinkle the remaining sugar over the top.
- Bake the galette at 375°F (190°C) for 25-30 minutes.
- Let the galette cool slightly before serving.
