- 4 large ripe peaches, pitted and sliced into wedges
- 1/2 cup old-fashioned rolled oats
- 1/4 cup all-purpose flour
- 1/3 cup light brown sugar, packed
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1/4 cup unsalted butter, cold and cubed
- 1/4 cup chopped pecans or walnuts (optional)
- 1 pinch of salt
Instructions
- Wash the peaches thoroughly and slice them into even wedges. In a medium bowl, toss the peach slices with one tablespoon of the brown sugar and a pinch of cinnamon until they are evenly coated.
- In a separate small bowl, combine the oats, flour, remaining brown sugar, cinnamon, ginger, salt, and chopped nuts. Use a fork or your fingers to work the cold, cubed butter into the mixture until it looks like coarse crumbs.
- Tear off four large squares of heavy-duty aluminum foil. Divide the peach slices evenly among the four squares, placing them in the center. Top each portion of peaches with a generous amount of the oat crumble mixture.
- Bring the long edges of the foil together and fold them over twice to seal. Then, fold the ends inward to create a secure pouch. Leave a little bit of space inside the pouch for steam to circulate during the cooking process.
- Place the foil packs on a preheated grill over medium heat (about 350-400°F). Close the grill lid and cook for 12 to 15 minutes. The peaches should be tender and the topping should be fragrant and set.
