Grilled Peach & Burrata Salad with Basil Oil

Description

A refreshing salad that beautifully combines sweet grilled peaches with creamy burrata cheese, enhanced by fragrant basil oil. Perfect for summer gatherings or as a light lunch.


Ingredients

  • 2 ripe peaches, halved and pitted
  • 8 oz burrata cheese
  • 2 cups arugula or mixed greens
  • 1/4 cup fresh basil leaves
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • Balsamic glaze (optional)

Instructions

  1. Preheat the grill to medium heat.
  2. Brush the cut sides of the peaches with olive oil and season with salt and pepper.
  3. Place the peaches cut side down on the grill and grill for about 3-4 minutes.
  4. Remove the peaches from the grill and let them cool briefly.
  5. Combine the fresh basil leaves and olive oil in a small blender or food processor and blend until smooth.
  6. Arrange the arugula or mixed greens on a large plate or platter.
  7. Place the grilled peaches on top of the greens and tear the burrata cheese, scattering it among the peaches.
  8. Drizzle the basil oil over the salad and finish with additional salt, pepper, and balsamic glaze if desired.

Notes

Choose ripe, but firm peaches for the best grilling results. If burrata isn’t available, fresh mozzarella can be used as a substitute.
