Ingredients

- 1 head Romaine lettuce
- 2 grilled chicken breasts
- 2 garlic scapes
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 cup homemade croutons
- 1/4 cup grated aged Parmesan cheese
- Salt to taste
- Pepper to taste
Instructions
- Prepare the garlic scape dressing: Blend garlic scapes, olive oil, lemon juice, salt, and pepper until smooth.
- Grill the chicken breast until fully cooked and slice it.
- Chop the romaine lettuce and place it in a large bowl. Add the grilled chicken slices on top of the lettuce.
- Drizzle with garlic scape dressing and toss to combine. Top with homemade croutons and grated aged Parmesan cheese. Serve chilled for a refreshing meal.
Notes
Store leftovers in an airtight container in the refrigerator for up to 2 days. Keep dressing and croutons separate until ready to serve to prevent sogginess.
