Description

A refreshing twist on the classic Caesar salad featuring juicy grilled chicken and a delightful garlic scape dressing.


Ingredients

  • 1 head Romaine lettuce
  • 2 grilled chicken breasts
  • 2 garlic scapes
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 cup homemade croutons
  • 1/4 cup grated aged Parmesan cheese
  • Salt to taste
  • Pepper to taste

Instructions

  1. Prepare the garlic scape dressing: Blend garlic scapes, olive oil, lemon juice, salt, and pepper until smooth.
  2. Grill the chicken breast until fully cooked and slice it.
  3. Chop the romaine lettuce and place it in a large bowl. Add the grilled chicken slices on top of the lettuce.
  4. Drizzle with garlic scape dressing and toss to combine. Top with homemade croutons and grated aged Parmesan cheese. Serve chilled for a refreshing meal.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days. Keep dressing and croutons separate until ready to serve to prevent sogginess.
