Description

A delightful dish combining shrimp, orzo, and fresh summer squash in a rich garlic butter sauce.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 cup orzo pasta
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 1 medium summer squash, diced
  • 1 cup vegetable or chicken broth
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the orzo according to package instructions. Once cooked, drain and set aside.
  2. Melt the butter in a large skillet over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Add the shrimp to the skillet and cook until pink, about 2-3 minutes.
  4. Stir in the diced summer squash and sauté for 3-4 minutes until the squash softens.
  5. Pour in the broth and bring to a simmer to meld the flavors.
  6. Gently stir in the cooked orzo, mixing it well with the shrimp and squash. Season with salt and pepper.
  7. Serve hot, garnished with fresh parsley.

Notes

Optionally, squeeze fresh lemon juice over the dish before serving for enhanced flavor.
