- 1 pound shrimp, peeled and deveined
- 1 cup orzo pasta
- 2 tablespoons butter
- 4 cloves garlic, minced
- 1 medium summer squash, diced
- 1 cup vegetable or chicken broth
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the orzo according to package instructions. Once cooked, drain and set aside.
- Melt the butter in a large skillet over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the shrimp to the skillet and cook until pink, about 2-3 minutes.
- Stir in the diced summer squash and sauté for 3-4 minutes until the squash softens.
- Pour in the broth and bring to a simmer to meld the flavors.
- Gently stir in the cooked orzo, mixing it well with the shrimp and squash. Season with salt and pepper.
- Serve hot, garnished with fresh parsley.
Notes
Optionally, squeeze fresh lemon juice over the dish before serving for enhanced flavor.
