- 1 spaghetti squash
- 4 tablespoons unsalted butter
- 2 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- Salt to taste
- Black pepper to taste
- Fresh parsley (optional, for garnish)
Instructions
- Preheat the oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds.
- Place the squash halves cut-side down on a baking sheet. Roast for 40-50 minutes until tender.
- Melt the butter in a small saucepan over medium heat. Add garlic and sauté for 1-2 minutes, until fragrant.
- Remove the roasted squash from the oven. Using a fork, scrape the flesh into strands. Combine with garlic butter, Parmesan, salt, and pepper. Toss well and serve warm, garnished with parsley if desired.
Notes
Microwave the spaghetti squash for 5-10 minutes if it’s difficult to cut. For extra flavor, add red pepper flakes to the garlic butter.
