Ingredients

  • 1 cup grated zucchini
  • 1/2 cup almond butter
  • 1/4 cup cocoa powder
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Combine the grated zucchini, almond butter, cocoa powder, honey (or maple syrup), vanilla extract, baking soda, and salt in a mixing bowl. Stir until well combined.
  3. Fold in the chocolate chips if using. Scoop the mixture onto the prepared baking sheet, forming small mounds. Bake for 15-20 minutes or until set.
  4. Allow your brownie bites to cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

Drain excess moisture from zucchini for best texture. Can be made vegan by using maple syrup in place of honey.
