- 1 cup grated zucchini
- 1/2 cup almond butter
- 1/4 cup cocoa powder
- 1/4 cup honey or maple syrup
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Combine the grated zucchini, almond butter, cocoa powder, honey (or maple syrup), vanilla extract, baking soda, and salt in a mixing bowl. Stir until well combined.
- Fold in the chocolate chips if using. Scoop the mixture onto the prepared baking sheet, forming small mounds. Bake for 15-20 minutes or until set.
- Allow your brownie bites to cool on the baking sheet for a few minutes before transferring them to a wire rack.
Notes
Drain excess moisture from zucchini for best texture. Can be made vegan by using maple syrup in place of honey.
