Frankenstein Rice Bowls

Frankenstein Rice Bowls

  • Total Time: 35 minutes
  • Diet: Vegetarian (variation mentioned)

Ingredients

Scale
  • 2 cups Jasmine rice
  • 2 cups fresh baby spinach
  • 2 cups water (or chicken broth)
  • 1 lb ground turkey or lean ground beef
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 sheets of Nori (dried seaweed)
  • 8 black olives, sliced
  • 8 pretzel sticks (for the “bolts”)
  • 1 red bell pepper (for the mouth)

Instructions

  1. Step 1: Create the Green Infusion
Place the fresh baby spinach and 1/2 cup of the water into a high-speed blender. Blend until the mixture is completely smooth and bright green. This liquid will act as your natural food coloring, ensuring your Frankenstein has that classic monster hue without any artificial dyes.
  2. Step 2: Cook the Green Rice
Rinse the Jasmine rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice, the spinach puree, and the remaining 1.5 cups of water. Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low, cover with a tight-fitting lid, and simmer for 15 minutes. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.
  3. Step 3: Season and Brown the Protein
While the rice cooks, heat olive oil in a large skillet over medium heat. Add the ground turkey or beef, breaking it up with a wooden spoon. Season with garlic powder, onion powder, salt, and pepper. Cook until the meat is browned and cooked through, about 8 to 10 minutes. This will serve as the “neck” or the base of your bowl.
  4. Step 4: Prepare the Facial Features
Use clean kitchen shears to cut the Nori sheets. Cut zig-zag strips for the hair and small rectangles for the stitches or eyebrows. Slice the black olives into rounds for the eyes and cut thin strips of red bell pepper to create a variety of “stitched” mouth expressions.
  5. Step 5: Assemble the Monster Bowls
Spoon the cooked meat into the bottom third of a square or rectangular bowl to represent the suit. Fill the rest of the bowl with the green rice, packing it down slightly to create a flat surface for the face. Place the Nori hair at the top of the rice. Add the olive eyes, the red pepper mouth, and more Nori for the iconic forehead scar. Finally, poke a pretzel stick into each side of the rice “head” to serve as the neck bolts.
