Ingredients

Instructions

  1. Begin by draining and rinsing the chickpeas thoroughly. Next, prepare the remaining ingredients by dicing the red onion, chopping the parsley, and crumbling the feta cheese.
  2. In a large bowl, combine the chickpeas, crumbled feta cheese, dried cranberries, diced red onion, and chopped parsley.
  3. In a separate small bowl, whisk together the olive oil, fresh lemon juice, and a pinch of salt and pepper.
  4. Pour the dressing over the salad mixture and toss gently to combine all the ingredients.

Notes
