- 1 cup small curd cottage cheese (4% milk fat works best)
- 2 tablespoons Everything Bagel seasoning
- Optional: 1/4 cup freshly grated Parmesan cheese (for extra crispiness)
- Optional: 1/4 teaspoon garlic powder
Instructions
- Preheat your oven to 400°F (200°C). Line a large baking sheet with high-quality parchment paper or a silicone baking mat. This is the most crucial step, as the cottage cheese will stick to a bare pan or aluminum foil. If your cottage cheese is particularly watery, strain it through a fine-mesh sieve for a minute to remove excess liquid. This ensures your crisps become crunchy rather than chewy.
- Spoon the cottage cheese into small mounds on the prepared baking sheet, leaving about two inches of space between each one. Use the back of the spoon to flatten the mounds into thin circles, roughly 3 inches in diameter. Generously sprinkle the Everything Bagel seasoning over each circle. Place the tray in the center rack of the oven and bake for 30 to 35 minutes. Watch them closely in the final minutes; you want the edges to be deep golden brown and the centers to look dry and slightly darkened.
- Remove the baking sheet from the oven and let the crisps sit for at least 5 to 10 minutes. They will continue to firm up and become crunchy as they cool. Once they are firm to the touch, gently peel them off the parchment paper. Serve them immediately as a standalone snack, or use them as high-protein “crackers” for dipping into hummus, guacamole, or even more cottage cheese!
