Ingredients

  • 4 cups watermelon, seeded and cubed
  • 1/4 cup coconut water
  • 1 tablespoon lime juice
  • 1 tablespoon honey or agave syrup (optional)
  • Pinch of salt

Instructions

  1. Start by placing the cubed watermelon into a blender. Ensure you remove any seeds beforehand for a smoother texture.
  2. Add the coconut water, lime juice, honey (if you choose to include it), and a pinch of salt into the blender. Blend until the mixture reaches a smooth consistency.
  3. Pour the blended mixture into a shallow dish. Place it in the freezer and allow it to freeze for about 120 minutes, or until it’s firm.
  4. Every 30 minutes, use a fork to stir the mixture. This helps create a fluffy sorbet texture instead of a hard frozen block. Continue this stirring process until the sorbet is fully frozen and slushy.
  5. Once ready, scoop the sorbet into bowls and enjoy!

Notes

Store leftovers in an airtight container in the freezer for up to one week. Let it sit at room temperature for a few minutes before scooping if it becomes hard while frozen.
