Description

Delightfully crispy on the outside and fluffy on the inside, these Greek-style potatoes are bursting with flavor from lemon and garlic, making them the perfect side dish.


Ingredients

  • 2 pounds Yukon Gold potatoes, cut into wedges
  • 1/4 cup olive oil
  • Juice of 2 lemons
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine the olive oil, lemon juice, minced garlic, oregano, salt, and pepper in a large bowl.
  3. Add the potato wedges to the bowl and toss well.
  4. Spread the potatoes in a single layer on a baking sheet and roast for 30-35 minutes, turning halfway through.
  5. Remove from the oven and garnish with fresh parsley before serving.
