- 2 pounds Yukon Gold potatoes, cut into wedges
- 1/4 cup olive oil
- Juice of 2 lemons
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Combine the olive oil, lemon juice, minced garlic, oregano, salt, and pepper in a large bowl.
- Add the potato wedges to the bowl and toss well.
- Spread the potatoes in a single layer on a baking sheet and roast for 30-35 minutes, turning halfway through.
- Remove from the oven and garnish with fresh parsley before serving.
