- Whole carrots

Instructions
- Preheat the oven to 425°F. Peel the whole carrots and cut them in half lengthwise.
- Toss the carrots with olive oil, minced garlic, Italian herbs, and salt.
- Place the seasoned carrots on a baking sheet lined with parchment paper. Sprinkle grated parmesan cheese over the carrots.
- Roast the carrots for about 35 minutes until tender and cheese is crispy.
