- 2 large Vidalia or yellow onions, cut into 1/2-inch rings

- 1 teaspoon garlic powder

- 2 cups Panko breadcrumbs

- Peel the onions and slice them into thick rings, about 1/2-inch wide. Separate the rings and set aside. Set up three shallow bowls for your breading station. In the first bowl, whisk together the flour, smoked paprika, garlic powder, salt, and pepper. In the second bowl, beat the eggs well. In the third bowl, place the Panko breadcrumbs. This assembly line ensures an even coating on every ring.
- Working in small batches, dip each onion ring into the seasoned flour, shaking off the excess. Next, submerge the ring into the beaten eggs. Finally, press the ring into the Panko breadcrumbs, ensuring it is fully coated on all sides. For extra crunch, you can double-dip them back into the egg and then the Panko, though a single layer works beautifully for a lighter snack.
- Preheat your air fryer to 375°F (190°C). Arrange the coated onion rings in the air fryer basket in a single layer. Do not overlap them, as they need airflow to get crispy. Lightly spray the tops with olive oil spray. Cook for 8 to 10 minutes, flipping them halfway through the cooking time. Spray the other side with oil after flipping to ensure both sides achieve a golden-brown finish.
- Remove the onion rings from the basket once they are crispy and deep golden brown. Serve them immediately while they are hot. Pair them with your favorite dipping sauces like spicy mayo, classic ketchup, or a tangy barbecue sauce. They make an excellent side dish for burgers or a standout appetizer on their own.
