  • 1 cup sun-dried tomatoes
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking
  • Parmesan cheese for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for 6-7 minutes on each side until golden brown and cooked through. Remove the chicken and set aside.
  3. Add minced garlic and sauté for 1 minute until fragrant.
  4. Add sun-dried tomatoes, chicken broth, and heavy cream to the skillet. Stir well and bring the mixture to a simmer.
  5. Include fresh spinach and Italian seasoning, cooking until the spinach wilts and incorporates into the sauce.
  6. Return the chicken to the skillet, spooning the creamy sauce over it. Cook for an additional 2-3 minutes to combine the flavors.
