- 2 chicken breasts
- 1 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1 cup chicken broth
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning

- Fresh basil for garnish (optional)
Instructions
- In a large skillet, heat olive oil over medium heat.
- Season the chicken breasts with salt, pepper, and Italian seasoning. Cook the chicken for about 5-7 minutes on each side or until fully cooked through. Once done, remove the chicken from the skillet and set it aside.
- Add minced garlic and chopped sun-dried tomatoes to the same skillet. Sauté for around 2 minutes until fragrant and the garlic starts to soften.
- Pour in the chicken broth, bringing it to a simmer. Stir in the heavy cream, cooking until the sauce thickens, which should take about 3-5 minutes.
- Return the cooked chicken to the skillet, ensuring it gets well coated in the creamy sauce.
- Serve warm, garnished with fresh basil if desired for an extra touch of flavor and color.
Notes
For added flavor, consider stirring in a tablespoon of pesto or adding red pepper flakes for a spicy kick.
