Ingredients

  • 2 chicken breasts
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking
  • Fresh basil for garnish (optional)

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Season the chicken breasts with salt, pepper, and Italian seasoning. Cook the chicken for about 5-7 minutes on each side or until fully cooked through. Once done, remove the chicken from the skillet and set it aside.
  3. Add minced garlic and chopped sun-dried tomatoes to the same skillet. Sauté for around 2 minutes until fragrant and the garlic starts to soften.
  4. Pour in the chicken broth, bringing it to a simmer. Stir in the heavy cream, cooking until the sauce thickens, which should take about 3-5 minutes.
  5. Return the cooked chicken to the skillet, ensuring it gets well coated in the creamy sauce.
  6. Serve warm, garnished with fresh basil if desired for an extra touch of flavor and color.

Notes

For added flavor, consider stirring in a tablespoon of pesto or adding red pepper flakes for a spicy kick.
