Description

A hearty and comforting soup featuring savory Italian sausage and creamy Yukon gold potatoes.


Ingredients

  • 1 lb Italian sausage, browned
  • 4 medium Yukon gold potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • Crispy bacon, for topping
  • Fresh parsley, for garnish

Instructions

  1. Brown the Italian sausage over medium heat for about 5-7 minutes.
  2. Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 3-4 minutes.
  3. Stir in the diced potatoes and chicken broth, bring to a boil, then let it simmer until potatoes are tender, about 20 minutes.
  4. Stir in the heavy cream and parmesan cheese, combine well and serve hot topped with crispy bacon and fresh parsley.

Notes

For a spicier kick, try using spicy Italian sausage. Substitute half-and-half for a lighter version.
