Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and cook until translucent, about 3-5 minutes.
  2. Add sliced mushrooms and minced garlic, then sauté until mushrooms are browned and tender, approximately 5-7 minutes.
  3. Stir in pasta, vegetable broth, heavy cream, dried thyme, and salt and pepper. Bring to a boil, then reduce heat to medium-low. Simmer until pasta is cooked and sauce thickens, about 15-20 minutes.
