Ingredients

  • 2 cups vegetable broth
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/2 cup heavy cream or cashew cream
  • 1 cup Parmesan cheese, grated
  • Salt and pepper to taste
  • Pasta of choice (fettuccine or spaghetti)
  • Parsley for garnish

Instructions

  1. Steam the cauliflower until tender, about 10 minutes.
  2. Heat olive oil over medium heat and add minced garlic, cooking until fragrant.
  3. Transfer steamed cauliflower, garlic, and vegetable broth to a blender, blending until smooth and creamy.
  4. Stir in heavy cream and Parmesan cheese, mixing until well combined. Season with salt and pepper to taste.
  5. Cook the pasta according to package instructions. Drain and combine with the cauliflower Alfredo sauce.

Notes

For a dairy-free option, use cashew cream instead of heavy cream and nutritional yeast instead of Parmesan.
