  • 2 cups cooked chicken breast (shredded or diced)
  • 1 cup buffalo sauce (mild or hot, to taste)
  • 0.5 cup ranch dressing (or blue cheese dressing)
  • 4 ounces cream cheese (softened, about 1/2 cup)
  • 1 cup shredded cheddar cheese (divided)
  • 1 cup shredded mozzarella cheese (divided)
  • 3 green onions (chopped, divided)
  • Salt and freshly ground black pepper (to taste)
  • Cooking spray or olive oil (for greasing, about 1 teaspoon)
  • Fresh parsley or chives (chopped, for garnish, optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with cooking spray or olive oil.
  2. Wash and chop cauliflower into florets. Steam or blanch for about 3-5 minutes until tender-crisp, then drain and pat dry.
  3. In a large mixing bowl, combine buffalo sauce, softened cream cheese, and ranch dressing. Stir until smooth.
  4. Add the cooked chicken and cauliflower to the bowl, gently tossing to coat. Stir in half of the shredded cheddar and mozzarella, seasoning with salt and pepper.
  5. Pour the mixture into the greased baking dish, spreading it out evenly.
  6. Sprinkle the remaining cheddar and mozzarella cheese over the top.
  7. Bake for 20-25 minutes until the cheese is melted, bubbly, and golden brown.
  8. Garnish with chopped green onions and optional parsley or chives before serving.
