- 1 large head cauliflower (cut into bite-sized florets)
- 2 cups cooked chicken breast (shredded or diced)
- 1 cup buffalo sauce (mild or hot, to taste)
- 0.5 cup ranch dressing (or blue cheese dressing)
- 4 ounces cream cheese (softened, about 1/2 cup)
- 1 cup shredded cheddar cheese (divided)
- 1 cup shredded mozzarella cheese (divided)
- 3 green onions (chopped, divided)
- Salt and freshly ground black pepper (to taste)
- Cooking spray or olive oil (for greasing, about 1 teaspoon)
- Fresh parsley or chives (chopped, for garnish, optional)
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with cooking spray or olive oil.
- Wash and chop cauliflower into florets. Steam or blanch for about 3-5 minutes until tender-crisp, then drain and pat dry.
- In a large mixing bowl, combine buffalo sauce, softened cream cheese, and ranch dressing. Stir until smooth.
- Add the cooked chicken and cauliflower to the bowl, gently tossing to coat. Stir in half of the shredded cheddar and mozzarella, seasoning with salt and pepper.
- Pour the mixture into the greased baking dish, spreading it out evenly.
- Sprinkle the remaining cheddar and mozzarella cheese over the top.
- Bake for 20-25 minutes until the cheese is melted, bubbly, and golden brown.
- Garnish with chopped green onions and optional parsley or chives before serving.
Notes
To store leftovers, cool completely before transferring to an airtight container. Refrigerate for up to 3-4 days or freeze for up to 3 months.
