Ingredients

  • 1 large carrot, grated

  • 1 cup cherry tomatoes, halved
  • 1/2 cup cilantro, chopped
  • 1/2 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon sugar
  • Salt and pepper to taste

Instructions

  1. Combine the shredded cabbage, grated carrot, sliced red onion, cherry tomatoes, and cilantro in a large bowl. Use your hands or tongs to mix gently for an even distribution.
  2. Mix the mayonnaise, apple cider vinegar, sugar, salt, and pepper in a separate small bowl until smooth.
  3. Pour the dressing over the cabbage mixture and toss until everything is evenly coated.
  4. Chill in the refrigerator for at least 30 minutes before serving.

Notes

For extra crunch, consider adding diced bell peppers or sliced radishes. You can also substitute Greek yogurt for mayonnaise for a lighter option.
