Description

A vibrant, fresh appetizer combining beans, vegetables, and zesty lime juice, perfect for parties or casual get-togethers.


Ingredients

  • 1 can black beans, rinsed and drained
  • 1 can corn, rinsed and drained
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 jalapeño, seeded and diced
  • 1/2 red onion, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • Salt and pepper to taste
  • Tortilla chips for serving

Instructions

  1. Start by rinsing and draining the black beans and corn. Chop the red and green bell peppers, jalapeño, and red onion into small, bite-sized pieces. Halve the cherry tomatoes and chop the fresh cilantro.
  2. In a large bowl, combine the black beans, corn, diced bell peppers, jalapeño, red onion, cherry tomatoes, and cilantro.
  3. Squeeze the juice of 2 fresh limes over the mixture and season with salt and pepper to taste.
  4. Stir everything well to combine all the ingredients and serve with crispy tortilla chips.

Notes

Best served fresh. Leftovers can be stored in the refrigerator for up to 3 days.
