- 1 can black beans, rinsed and drained
- 1 can corn, rinsed and drained
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 jalapeño, seeded and diced
- 1/2 red onion, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh cilantro, chopped
- Juice of 2 limes
- Salt and pepper to taste
- Tortilla chips for serving
Instructions
- Start by rinsing and draining the black beans and corn. Chop the red and green bell peppers, jalapeño, and red onion into small, bite-sized pieces. Halve the cherry tomatoes and chop the fresh cilantro.
- In a large bowl, combine the black beans, corn, diced bell peppers, jalapeño, red onion, cherry tomatoes, and cilantro.
- Squeeze the juice of 2 fresh limes over the mixture and season with salt and pepper to taste.
- Stir everything well to combine all the ingredients and serve with crispy tortilla chips.

Best served fresh. Leftovers can be stored in the refrigerator for up to 3 days.
