- 2 cups cottage cheese
- 1 cup fresh strawberries, hulled and sliced
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- 1/2 cup heavy cream
- Pinch of salt
Instructions
- Combine cottage cheese, sugar, vanilla extract, lemon juice, and salt in a blender. Blend until smooth.
- Mash the strawberries in a separate bowl and mix with sugar if desired.
- Fold the heavy cream into the cottage cheese mixture until well combined.
- Layer the strawberry mixture into the cottage cheese mixture in a freezer-safe container, swirling gently. Freeze for at least 4 hours.
- Serve in bowls and enjoy!
