Description

Delightful cottage cheese pancakes that are fluffy, protein-packed, and perfect for breakfast or brunch.


Ingredients

  • 1 cup cottage cheese
  • 2 eggs
  • 1/2 cup flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • Butter or oil for cooking
  • Berries for topping
  • Maple syrup for drizzling

Instructions

  1. Blend together the cottage cheese, eggs, flour, sugar, baking powder, and salt until smooth.
  2. Heat a non-stick skillet over medium heat and add a little butter or oil.
  3. Pour batter onto the skillet to form pancakes and cook until edges are set and bubbles form, about 2-3 minutes.
  4. Flip each pancake and cook until golden brown on the other side, about another 2-3 minutes.
  5. Serve warm topped with seasonal berries and a drizzle of warm maple syrup.

Use fresh cottage cheese for the best flavor and texture. Adjust batter thickness with more flour or milk as needed.
