Instructions
- Blend together the cottage cheese, eggs, flour, sugar, baking powder, and salt until smooth.
- Heat a non-stick skillet over medium heat and add a little butter or oil.
- Pour batter onto the skillet to form pancakes and cook until edges are set and bubbles form, about 2-3 minutes.
- Flip each pancake and cook until golden brown on the other side, about another 2-3 minutes.
- Serve warm topped with seasonal berries and a drizzle of warm maple syrup.
