- 2 cups low-fat cottage cheese
- 1/4 cup fresh Key lime juice
- 1 tablespoon lime zest
- 3 tablespoons maple syrup or honey
- 1/2 teaspoon vanilla extract
- 1/2 cup graham cracker crumbs
- 1 tablespoon melted butter (optional)
- Extra lime slices for garnish
Instructions
- Step 1: Prepare the Graham Cracker Base. In a small mixing bowl, combine the graham cracker crumbs with the melted butter. Stir until the crumbs are evenly coated. Divide the mixture evenly between four small mason jars and press down lightly to form a crust at the bottom.
- Step 2: Blend the Filling. Place the cottage cheese, Key lime juice, maple syrup (or honey), and vanilla extract into a high-speed blender or food processor. Blend on high for 1 to 2 minutes until the mixture is completely smooth and no curds remain.
- Step 3: Add the Zest. Stir in the lime zest by hand using a spatula. This ensures the zest is distributed throughout the filling without being completely pulverized by the blender, providing little bursts of citrus flavor.
- Step 4: Assemble the Jars. Pour or spoon the smooth lime mixture over the graham cracker crust in each jar. Smooth out the tops with the back of a spoon.
- Step 5: Chill and Set. Place the lids on the jars and refrigerate for at least 30 minutes to allow the filling to set slightly. This also allows the flavors to meld together for a better taste.
