Ingredients
Scale
- 1 cup low-fat or whole-milk cottage cheese (small curd works best)
- 1/4 cup grated Parmesan cheese (optional, for extra crispness)
- 1 teaspoon Everything Bagel seasoning
- 1/2 teaspoon garlic powder
- Parchment paper (essential for non-sticking)
Instructions
- Preheat your oven to 375°F (190°C). Line a large baking sheet with high-quality parchment paper. Do not use wax paper, and do not skip the parchment, as the cheese will stick to the bare metal pan or even a greased surface. If your cottage cheese seems particularly watery, strain it slightly through a fine-mesh sieve to remove excess moisture before starting.
- In a small bowl, combine the cottage cheese, Parmesan cheese, and garlic powder. Stir until the seasonings are evenly distributed. Use a tablespoon or a small cookie scoop to place small mounds of the mixture onto the prepared baking sheet. Space them at least 2 inches apart. Use the back of a spoon to gently flatten each mound into a thin, even circle about 2 to 3 inches in diameter. Sprinkle the Everything Bagel seasoning over the top of each circle.
- Place the baking sheet in the center rack of the oven. Bake for 15 to 20 minutes. Watch them closely after the 15-minute mark. You are looking for the edges to turn a deep golden brown and the centers to lose their “wet” look and become firm. The timing may vary depending on the moisture content of your specific brand of cottage cheese.
- Remove the pan from the oven and let the crisps sit on the baking sheet for at least 5 to 10 minutes. This cooling period is crucial; the crisps will continue to harden and become crunchy as they come down to room temperature. Once they are firm, gently peel them off the parchment paper and serve immediately or store them for later.
- Cook Time: 25 minutes
