Ingredients
Scale
- 1 cup low-fat or full-fat cottage cheese
- 2 tablespoons unsweetened cocoa powder
- 1–2 tablespoons maple syrup, honey, or monk fruit sweetener (adjust to taste)
- 1/2 teaspoon pure vanilla extract
- 1 pinch sea salt
- Optional: Fresh berries, chocolate chips, or crushed nuts for topping
Instructions
- Gather all your ingredients and a high-speed blender or food processor. If your cottage cheese has a lot of excess liquid (whey) sitting on top, you may want to drain a tiny bit of it off to ensure the mousse stays thick, though a little liquid helps the blending process.
- Place the cottage cheese, cocoa powder, sweetener of choice, vanilla extract, and sea salt into the blender jar. Start on a low speed to incorporate the powder, then crank it up to high. Blend for 45 to 60 seconds until the mixture is completely smooth and no white curds remain. Scrape down the sides of the blender once during the process to ensure every bit is combined.
- Transfer the mousse into small bowls or ramekins. While you can eat it immediately, the texture improves significantly if you let it chill in the refrigerator for at least 30 minutes. This allows the mousse to “set” and become even thicker. Top with your favorite garnishes like fresh raspberries or a sprinkle of dark chocolate chips before serving.
- Cook Time: 5 minutes
