Instructions
- Step 1: Combine Ingredients – Place the cottage cheese, cocoa powder, maple syrup, vanilla extract, and sea salt into a high-powered blender or food processor. Ensure the cottage cheese is cold straight from the fridge for the best initial consistency.
- Step 2: Blend Until Smooth – Blend the mixture on high speed for about 60 to 90 seconds. You want to completely pulverize the curds of the cottage cheese until the mixture is silky smooth and looks exactly like traditional chocolate pudding. Stop and scrape down the sides if necessary to ensure every bit is incorporated.
- Step 3: Chill and Serve – Transfer the mousse into individual serving bowls or ramekins. While you can eat it immediately, the texture improves significantly if you let it chill in the refrigerator for at least 30 minutes. This allows the mousse to set and the flavors to deepen. Add your favorite toppings just before serving.
