Cottage Cheese Banana Bread Protein

  • 3 ripe bananas, mashed (about 1.5 cups)
  • 1 cup low-fat cottage cheese
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups oat flour (or whole wheat flour)
  • 1 scoop (30g) vanilla protein powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • Optional: 1/4 cup dark chocolate chips or crushed walnuts

Instructions

  1. Preheat your oven to 350°F (175°C). Line a standard 9×5-inch loaf pan with parchment paper or grease it lightly with non-stick cooking spray to ensure easy removal.
  2. In a blender or food processor, combine the cottage cheese, ripe bananas, eggs, and vanilla extract. Blend until the mixture is completely smooth and no cottage cheese curds remain. This ensures a uniform texture in your bread.
  3. In a large mixing bowl, whisk together the oat flour, vanilla protein powder, baking soda, cinnamon, and salt. Make sure there are no large clumps of protein powder in the mix.
  4. Pour the blended banana and cottage cheese mixture into the bowl with the dry ingredients. Use a spatula to gently fold everything together until just combined. If you are using chocolate chips or walnuts, fold them in now.
  5. Pour the batter into your prepared loaf pan and smooth the top. Bake for 45 to 55 minutes, or until a toothpick inserted into the center comes out clean. If the top starts browning too quickly, you can loosely cover it with foil for the last 10 minutes.
  6. Remove the pan from the oven and let the bread cool in the pan for about 10 minutes. Then, transfer the loaf to a wire rack to cool completely before slicing. This helps the structure set so it doesn’t crumble when cut.
