Ingredients

  • 2 cups sweet corn kernels
  • 2 tbsp bacon fat
  • 8 oz whipped cream cheese
  • 1 cup sour cream
  • 1 cup shredded sharp cheddar cheese
  • 1 cup Monterey jack cheese
  • 1 diced jalapeño
  • 2 cloves garlic, minced
  • 1/2 cup crumbled crispy bacon

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook sweet corn kernels in bacon fat over medium heat until charred, about 5-7 minutes.
  3. Mix charred corn with whipped cream cheese, sour cream, cheddar, Monterey jack, jalapeño, garlic, and bacon until creamy.
  4. Transfer mixture to a cast iron skillet and bake for 15 minutes until bubbling and golden.
