- 8 oz rice noodles
- 3 tbsp sesame oil
- 3 tbsp soy sauce
- 2 tbsp rice vinegar
- 1 tbsp honey or sugar
- 1 tsp chili paste (optional)
- 1 cup cucumber, julienned
- 1 cup carrot, shredded
- 2 green onions, chopped
- Sesame seeds, for garnish
Instructions
- Cook the rice noodles according to package instructions until al dente. Once cooked, drain and rinse them under cold water to stop the cooking process.
- Whisk together the sesame oil, soy sauce, rice vinegar, honey (or sugar), and chili paste in a bowl for the sauce.
- Toss the cooled noodles with the prepared sauce until every strand is well coated.
- Add the julienned cucumber, shredded carrots, and chopped green onions to the noodles, mixing until everything is evenly combined.
- Serve the noodles in bowls garnished with sesame seeds. Enjoy chilled or at room temperature!
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days, and toss with a splash of soy sauce or sesame oil before serving.
