Description

A refreshing fusion of textures and flavors, these Cold Sesame Noodle Bowls are perfect for summer meals or a quick weeknight dinner, featuring fresh vegetables and a luscious sesame sauce.


Ingredients

  • 8 oz rice noodles
  • 3 tbsp sesame oil
  • 3 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp honey or sugar
  • 1 tsp chili paste (optional)
  • 1 cup cucumber, julienned
  • 1 cup carrot, shredded
  • 2 green onions, chopped
  • Sesame seeds, for garnish

Instructions

  1. Cook the rice noodles according to package instructions until al dente. Once cooked, drain and rinse them under cold water to stop the cooking process.
  2. Whisk together the sesame oil, soy sauce, rice vinegar, honey (or sugar), and chili paste in a bowl for the sauce.
  3. Toss the cooled noodles with the prepared sauce until every strand is well coated.
  4. Add the julienned cucumber, shredded carrots, and chopped green onions to the noodles, mixing until everything is evenly combined.
  5. Serve the noodles in bowls garnished with sesame seeds. Enjoy chilled or at room temperature!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days, and toss with a splash of soy sauce or sesame oil before serving.
